William U. from Orange County, CAI rate this knife 4 1/2 Stars. The Kershaw Knives Yanagiba is a wonderful light-weight knife to use in the kitchen or on the table for carving. It is commonly used in sushi bars for its precision. I purchased the 8" version and now I think I'll order the 6". These knives are actually "right handed", as they are beveled on the right side, or "away side" if you're right handed, the left side is dead flat. This produces a blade which is very sharp. It floats through even tough cuts of meat effortlessly. It is best to use it with a slicing motion, rather than chopping. The handle is a polypropylene polimer plastic impregnated with bamboo dust which provides a slip-free grip, even if your hands are slipery. As the handle has no escutcheon to keep your fingers away from the blade, use caution not to nick your finger on the very sharp rear corner of the blade (This is the only reason I did not give it a full 5 star rating). It can be stoned and steeled, but I recomend that you stone only the beveled side lightly. Use your steel to gently hone the flat side after sharpening. As with any extremely sharp carving blade, I suggest that you learn to carve through the food and not bear down on the cutting board to preserve its sharp edge. These knives are marvelous for the price!
