I bought this knife to replace a boning knife that I'd had for 45 years. This is a well made knife the handle is comfortable and I love the curve of the blade. So far it's held a decent edge. The only thing I have to get used to is it's lightness and flexibility of the blade. it does the job.
Old school carbon steel - fourth one I've owned in my 65 years (they start to look like filet knives after a dozen years of whetstone sharpening) - and still the best all-around knife in my kitchen. Simply can't find them at any fancy kitchen store or even commercial kitchen dealers. Takes a fine edge with ceramic sharpeners: can slice tomatoes like a Ginsu. Watch your fingers. And keep them out of the dishwasher!
